My votes :
The Knights Panther (because of their look)
The Order of the Broken Sword (because of their history)
The Knights Encarmine (they are red and they wield two swords... What more could you possibly want)
I also wanted to vote for The Templars of the Everlasting Light, because I feel sorry for them...

I'm appalled that I can't vote for the knights of Esmeralda's apron...  :P

(Recently for a warhammer unit designing competition I created a Halfling knightly order, for their goddess Esmeralda).
The duke, the wanderer, the philosopher, the mariner, the warrior, the strategist, the storyteller, the wizard, the wayfarer...

They are no match for the Knights of the Imperial Gunnery School (need a better name)  lances and pistols!

I only sculpted one Knight... he's not very well proportioned but it is the third scratch-sculpt I've ever done so it's not that surprising really.

The Valiant Order of Esmeralda's Apron

The Moot has many defenders, but few as strange as Sir Brettlefort and his tiny band of warriors - the smallest knightly order in the world, in more ways than one... Fighting Giants, Beastmen, and Orcs the Order of Esmeralda's apron are seen by the moot-folk as fine defenders of their land, and by most other races and knightly orders as a source of utter  bewilderment. The Order is often seen on the edges of the Halfling land, fighting back against monsters too terrible to name. They fight with all the wrath of those fearsome warriors who know one thing that drives them onward; they won't be getting elevenses until the foe is gone!

Motto: To battle, and home in time for crumpets!

For Hire: Dogs of War and Empire armies may hire the Valiant Order as a special choice. Brettonian, Dwarf, Lizardmen, Kislevite, High Elf and Wood Elf armies may hire the Valiant Order as a rare choice. Note that the usual rule against Brettonians hiring mercenaries is waived, as the little guys ARE knights... technically.

Points: Brettlefort and 4 Brettlings (Including Sir Bagelpin and a horn-blower) cost a total of 140 points. This is the minimum size unit you may hire. Additional Brettlings may be hired for an extra 15 points each, to a maximum of 10.

Equipment: Heavy Armour, Shield, Spear, Barded Pony
Bagelpin; Heavy Armour, Shield, Spear, Apron Banner, Barded Pony
Brettlefort; Heavy Armour, Shield, Lance of the Spit-Roast, Barded Pony

Note that the ponies are barded already and thus give +2 to armour saves instead of +1.

Special rules: Stubborn, Valiant

Valiant; Ignore fear or terror tests caused by models of US3 or above.

MAGIC ITEMS
Lance of the Spit-Roast: This holy item of Esmeralda, retrieved by Brettlefort from the foul lair of a beastman who had dared to raid the Moot some years before, has brought grim death and a mild taste of crispy bacon to many foes of the Halflings. Any hit from the lance is multiplied to as many potential wounds as the opposing model's unit strength (so 3 for an ogre, one for a dwarf, etc).
Apron Banner: Said to have been worn by the goddess herself, the Apron Banner shields the unit from many dangers. While the banner is with the unit, all attacks agains the unit are at -1 to their strength.

The pony is kind of weird... But it's not that bad.
After all you've said that it's your third sculpt. I'm sure that your skills will improve trough practice.
And the shield looks quite good right now...

The pony's legs are too stiff really. And its head's awfully wide. That said, inexperience is probably the defining factor here.
